Classic Salted Caramel Our classic caramel, with its rich buttery finish has an old fashion flavor profile that gives rise to fond childhood memories.  The Classic has a sense of nostalgia invoking emotions fueled by simplicity and pleasure.  It is hand dipped in a 55% dark chocolate coverture and then finished with a Murray River Pink Flake Salt from Australia.

Soft, smooth, and chewy are the best words used to describe this classic caramel.  A minimalist approach is the key to the classic as it only takes three ingredients to produce this simple yet rewarding caramel.  Sweet cream, butter and light brown sugar.  The light brown sugar adds a rich texture and provides a subtle nutty addition to the flavor profile distinguishing this caramel from other caramel producers that typically use white sugar during their caramel production process.

The vanilla bean that we use in this infusion comes from a orchid called the Vanilla planifolia.  This is a unique flower. It grows as a vine and will grow as high as its beam or tree can support it. It flowers one day out of the year and one flower produces one fruit. The Vanilla planifolia flowers are hermaphroditic meaning they carry both male and female organs, however they cannot self-pollinate.  Until the late 1800’s the only way the fruit was pollinated was naturally.  The natural pollination is completed by a small bee native to Mexico known as the Melipone black bee.  Vanilla beans are said to be an aphrodisiac, they are widely used in aromatherapy and in pre-Columbian times used as a remedy for fevers.
