Chef Jeffrey Strauss has a flair for presentation and an unquestionable talent for taste that has delighted the palates of the world’s most powerful business brokers, socialites, United States Presidents and both American and foreign dignitaries. From “Chef of the Stars” Jeffrey evolved to share his cuisine that is creative and elegant, yet casual and unpretentious, when he founded the acclaimed Pamplemousse Grille in San Diego, CA in 1996.
Early in Jeffrey’s career he discovered that he had a passion for creating artisan chocolates and other fine confections. As Pamplemousse Grille began to experience tremendous success this passion drifted into the background until Jeffrey and his Executive Pastry Chef, Joe Burns were entrusted with the task of creating a memorable chocolate candy for a large dinner party. Chef Burns created this amazing hand dipped sea salted chocolate caramel that has since become the ‘Classic Caramel.’ The dinner party guests raved over this delectable confection and Jeffrey and Joe began to experiment with a variety of culinary infusions that complimented these amazing chocolate caramels. The resulting candies became enormously popular both in the restaurant and at dinner parties throughout Southern California. This enthusiasm inspired the creation of Le Petit Mousse Chocolates.
